TENDERSTEM & APPLE SALAD w/ Honey DRESSING
TENDERSTEM & APPLE SALAD W/ HONEY DRESSING
I would say a lot of people definitely over consume and over buy food, and a lot will go to waste. It's times like these when we can realise how little we need to make a great tasting and healthy meal.
“We are all thinking about what we can do for the environment and this is one of the most simple and powerful ways we can play our part. By wasting less food, we are helping to tackle the biggest challenges this century – feeding the world while protecting our planet.” Marcus Gover, chief executive of WRAP in the guardian.
Here's a simple but different salad using minimal ingredients that still packs a nutritious punch.
Serves 1 / 2
Salad
1 Pack of tenderstem broccoli
1 apple
1 chilli
2 sprigs of mint
Dressing
2 tablespoons extra virgin olive oil
1 heaped teaspoon honey
½ lemon
sea salt
cracked black pepper
Garnish
Sumac
Method
Steam the tenderstem broccoli until tender, should take about 5 minutes max.
Chop the apple into matchsticks. Slice the chili. Take the Broccoli off the heat and rinse with cold water. Mix all of the ingredients to a bowl along with some mint leaves.
Mix the dressing ingredients in a small bowl and drizzle over the salad.
