CLEANSING CELERIAC SOUP

It's all about giving our bodies a break sometime. The best way to do that is by using food or no food. Sometimes the body just needs a break from over working in the digestive process. Even though I do eat very well and consciously, I also sometimes feel like a cleanse. Sometimes I cleanse with food and other times I will do water or juice fast. Doing fasts is more intense and should be done with intention. Going straight into a fast from a heavy poor diet can be a bit intense and could cause some stress. Cleansing can also build your resilience and discipline with eating, there are lots of different kinds of negative eating, doing a cleanse will reset you - mind, body, spirit. You will feel physically better, you will gain more energy, you will feel more focused, more inspired and generally be better for others. Today I wanted to share a recipe that is perfect for cleansing. Soups, broths are excellent for this process. I'm currently building a cleanse plan and I think this will be part of it so this is a little taster. 

Celeriac is a super veg, it's the root of celery, and celery juice has also gained a lot of attention with its powers when juiced. Celeriac is a powerhouse of goodness, diuretic, laxative, anti-rheumatic and tonic effects. It's full of antioxidants, it improves blood health, anti-cancer and boosts the immune system. I have also paired other powerful ingredients garlic, thyme, cumin, lemon. 

Serves 2 

 

Soup

  • 1 large celeriac

  • 1 onion

  • 2 cloves garlic (finely chopped)

  • 3 sprigs thyme

  • 1 tablespoon cumin

  • 700 ml water

  • 1 tablespoon coconut oil

  • himalayan salt

  • black cracked pepper

 

Garnish

Coconut yogurt, extra virgin olive oil, lemon, sumac

 

Method

Finely chop garlic and onion. Peel the celeriac then cut into dice shapes. Get a medium sized saucepan on medium heat with a tablespoon of coconut oil. Add garlic and onion and saute down until soft. Add cumin thyme and celeriac and give it a good mix, saute for a further 5 minutes and season. Add water to the pan, bring to the boil, then simmer for about 15 minutes. Once the water has reduced the celeriac is soft and cooked, take out the sprigs of thyme, turn the heat off and blitz preferably with a handheld soup blender. 

Spoon into a bowl and garnish as you like.
