BOMBAY POTATO SALAD 

Another recipe as part of my cheap organic plant based meals series. The series is to show how you can make healthy nutritious meals that are organic and extremely cheap and affordable. Going organic is one of the most powerful things we can do to help our ecosystem, so I wanted to show how it is possible to go organic on a budget without a lack of flavour.

This is a side dish that bangs on all levels, good enough to be eaten on its own in my opinion. Making the best of the new potato and jersey royals season with anglo indian edge. A warm potato salad meets indian spice. Simple and delicious. 

 

Ingredients

  • 500g jersey royals OR new potatoes

  • 2 tablespoon coconut oil

  • 2 spring onions (sliced)

  • 1 teaspoon turmeric powder 

  • 1 teaspoon curry powder

  • 1 teaspoon garam powder

  • 5g fresh mint  

  • black ground pepper 

  • himalayan salt 

 

Garnish 

Fresh mint leaves, spring onion tips, sesame seeds, nigella seeds

 

Method

Boil the potatoes in salty water. 

When the potatoes are fully cooked remove and drain in a colander. 

Pop the potatoes back in the empty saucepan and put the lid back on for a few minutes. This will help remove the skins. 

Remove the skins with your hands, the skins will slide off. 

Discard the skins and keep the potatoes to one side. 

Put a frying pan or saucepan on a medium heat. 

Add the coconut oil, one it has melted add the spices. 

After a minute or so add the spring onions and the potatoes and season well. 

Give it a good mix through coating the potatoes in the spices. 

After 5 minutes add some chopped mint leaves. 

Give it a good stir. 

Add to your favourite bowl and top with some fresh mints leaves and other garnishes.
