As Im completely dairy free, wheat free and gluten free because Im intolerant, burger season can get pretty tricky. So I have adapted a new bun recipe, using chickpea flour and a cashew cheese spread, the spread was actually made by my love Josie and both are really good. I also added some crispy sautéed mushrooms and spinach in this with avocado and sumac and some vio life mature cheddar slices. This is a super thin smashed and charred beef patty, I don’t eat much red meat protein, only when I feel the call or when its BBQ time. I only buy organic, free range, grass fed meat! I only eat higher welfare animals that have had love and care they deserve and I also give a gratitude to this animal before eating. Industrialised meat industry is terrible, if you want meat I suggest to always pay more and get the best quality and respect the animal. Supporting industrialised animal agriculture is bad for yourself and also bad for the planet. Organic, free range, grass fed farms support the creation of good soil, the better the soil the better the food and nutritional value. Free range animals roaming on soil is great for the environment and support new soil growth. Supermarket industrialisation kills the soil!! Go for quality not quantity.
Chickpea Bun
half cup chickpea flour
just under half cup water
1 teaspoon baking powder
pinch himalayan salt
Method
Add flour, salt, baking powder to a bowl give it a good mix, make a well and add water wisk it together with a fork until combined and smooth. Heat pancake pan or frying on medium high heat add a touch of oil then ladle your mixture. Wait until you see whole forming takes around 1 minute then give it a flip, heat other side for about 30 seconds.
Tips
Dont over cook them you want it to be light a fluffy a bun.
