QUICK VEGGIE DAHL

I made this a few weeks back before we I went on a 24 hour water fast. Such a warming hearty comforting dish. Super easy to make and great if you only have a few things in the fridge or cupboards. You can swap out ingredients and spices and make to your own! I used a tin of organic green lentils for this one with some veggies and light spices. Yummy! 

Serves 4

  • 1 x tin (400g) green lentils 

  • 2 leeks 

  • 4 small carrots

  • 4 medium sized potatoes

  • 4 garlic cloves 

  • 1 teaspoon fennel seeds

  • 1 teaspoon curry powder

  • 1 teaspoon turmeric 

  • 2 teaspoons fenugreek 

  • 2 teaspoons cumin powder

  • 2 tablespoons coconut oil 

  • himalayan salt

  • cracked black pepper 

Garnishes 

Coconut yogurt, olive oil, fresh coriander, pul biber 

Method

Peel and chop all your veggies set aside. Large saucepan on medium heat add 1 tablespoon coconut oil, once its melted add your spices, salt and pepper give it a stir letting them take on some heat, then add garlic and sweat this down for a few mins! Then add other 1 tablespoon coconut oil with all of the veggies and sweat the veggies down for about 10 mins on a medium heat string continuously. Then add lentils and some stock, just enough to cover the veggies and lentils and cook until the potatoes are nice and tender.
