BAKED EGGS WITH LEFT OVERS

Post Yoga breakie! Using up some chopped veg from a conscious cook shop. This is great power breakie after a workout - fats, fibre, protein, greens!! This shows you don’t need many ingredients to have a super healthy and tasty breakfast. Simples!

Serves 1 (but increase as you wish)

  • 2 eggs 

  • 1 garlic clove 

  • 2 small potatoes - part boiled

  • 1 x leaf of spring greens finely chopped

  • 2 mushrooms

  • 1/4 courgette

  • sprinkle dry chilli (pul biber)

  • 1 teaspoon fennel seeds

  • chopped parsley

  • 1 tablespoon coconut oil 

  • himalayan salt

  • cracked black pepper

Garnishes

Sea salt, squeeze of lemon

Method

Chop all your veggies to a small size so they can fry quickly. Put a frying pan on medium heat, add fennel seeds to the pan dry for a minute then add coconut oil. Once the oil has melted, saute garlic for a couple minutes then follow with salt and pepper and any left over veg. Once golden move them the outside of the pan so they are not cooking and just keeping warm, making room for the eggs. Crack the eggs in the pan and cook them as you like them. I like to put them under the grill the yolk on the top side cooks just a touch.
