GLUTEN-FREE FRENCH TOAST W/ CANDIED BANANA
Nothing more glorious than this breakfast. Perfect for the weekend.
For this I used a slice of gluten-free seedful loaf and I also used an egg in my french toast mix but it can be made without an egg for sure to make it vegan. This is a great transitional breakfast if you have a sweet tooth and you're trying to curb the refined sugar. You wont miss the refined sugars when you start to explore natural sugars in this way.
Going to keep it short and sweet recipe below. Super scrummy!
Enough mix to serve 4
French toast
2 slices gluten free seedful loaf
1 egg (optional)
1 cup almond OR cashew milk
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon coconut oil
sprinkle coconut sugar
Pinch of himalayan salt
Candied Bananas
2 bananas
1 teaspoon coconut sugar
Garnish
Toasted peanuts, toasted sesame seeds, cinnamon, maple syrup, nut butters
Method
Whisk the french toast mixture in a bowl. Dip the bread in the french toast mix for about 30 seconds so it can soak in the goodness. Get a large frying pan on a medium and add coconut oil to melt. Sprinkle the pan with some coconut sugar, this will caramelize. Add the bread to the pan. Cut the banana lengthways, dip the banana in the french toast mix too then add to the pan. Sprinkle the bananas with coconut sugar too. You want to cook both for about 5 minutes, turn them in between and look for the caramelized colouring. Plate it up by toast on the bottom then the banana on top with garnish of your choice.
