PAN CON TOMATE KINDA DAY 

Kept seeing this dish in my awareness recently so thought I would give my spin on it. I think we can all agree simple simple can be delicious. Being totally honest I really do miss bread at times, I know there are plenty of brands doing gluten-free but they are usually full of nasty stuff. Recently I tired out this seeded gluten-free loaf by Seedful and it's really excellent. Made from oats and seeds and all organic. Anyone who is gluten-free out there I highly recommend trying this. 

Serves 1

  • 1 slice of seedful super seed loaf

  • Organic egg

  • 2 cherry tomatoes (grated)

  • 1 small piece garlic (grated)

  • Extra virgin olive oil

  • Sea salt 

  • Cracked black pepper

Method

Toast the bread. Get your egg frying in rapeseed oil. Grate garlic, tomato into a bowl, add olive oil and season. Smear half the tomato mix on the bread, place over the egg, finish with more tomato and finish with parsley and sumac.
